Preheat the air fryer to 325°F (165°C), and then in a large bowl, cream the butter, caster sugar and brown sugar until it's light and fluffy.
Beat together your eggs and vanilla extract in another bowl and then gradually add in your oats, flour, dry pudding mix, baking soda and salt. Once all evenly combined stir in your chocolate chips and nuts if your using them.
Use a little butter to grease an airfryer safe tray and drop on the dough by tablespoonfuls then flatten slightly. Be sure to leave about 1 inch between cookies so they can expand while cooking.
Cook at 325°F (165°C) until golden brown thats 8 to 10 minutes in most air fryers.
